Cataplana de Marisco (Portuguese Seafood Stew
1 lb clams, cleaned
1 lb shrimp, peeled and deveined
1/2 lb mussels, cleaned
1/2 lb squid, cleaned and cut into rings
1 large onion, sliced
1 bell pepper, sliced
4 cloves garlic, minced
2 tomatoes, chopped
1/2 cup white wine
1/4 cup olive oil
1 tsp paprika
1 bay leaf
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
In a large cataplana (or deep, heavy pot with a tight-fitting lid), heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, sautéing until softened. Stir in the chopped tomatoes, paprika, and bay leaf, cooking for a few minutes until the tomatoes begin to break down.
Pour in the white wine and bring to a simmer. Add the clams, mussels, squid, and shrimp, then cover the cataplana and cook for about 10 minutes, or until the shellfish have opened and the shrimp are cooked through.
Season with salt and pepper to taste, and garnish with fresh cilantro before serving.
